Banana Pancakes

These easy high-protein pancakes, made with Yellow Pea Flour, are light, fluffy, and packed with plant-based protein. Perfect for a quick breakfast or post-workout meal, they’re naturally Gluten Free and full of fibre to keep you satisfied. Top them with your favourite fruits, nut butter, or a drizzle of maple syrup for a delicious and wholesome treat!

Ingredients

  • 1 large mashed banana
  • 
1/2 cup soy milk

  • 1 cup yellow pea flour 

  • 1 tablespoon baking powder
  • 
1/2 teaspoon salt

Method

  1. Mix the ingredients – In a bowl, mash the banana until smooth. Add the soy milk, Yellow Pea Flour, baking powder and salt. Stir until well.
  2. Preheat the pan – Heat a non-stick pan over medium heat and lightly grease it with a little oil or butter.
  3. Cook the pancakes – Spoon small amounts of batter onto the pan. Cook for about 2 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.
  4. Serve & enjoy – Stack your pancakes and top them with your favorite toppings, such as yogurt, fruit, nuts, or a drizzle of honey!
